How to make
Tenderize the steaks well, sprinkle them with plenty of spices and leave for 3 hours in a cool area. Sauté the mushrooms with 1/2 a packet of butter. Lightly fry steaks on both sides.
On the bottom of a glass cook pot, put a few mushrooms, 3 steaks, smoked cheese, then steaks, mushrooms, smoked cheese.
Brush the steaks with mayonnaise and mustard. Pour the wine and broth in and sauté for about 90 minutes in a moderate oven. Salt is hardly necessary.
You may thicken the sauce with a little flour if necessary and bake for another 15 minutes.
