"Two partridges can turn the table into a feast for the senses - see how a bit further down"

Ingredients

  • partridges - 2 pcs.
  • carrots - 3 - 4 pcs.
  • mushrooms - 7 oz (200 g)
  • red wine - 4/5 cup (200 ml)
  • bay leaf
  • allspice
  • black pepper
  • paprika
  • salt
  • olive oil

How to make

Pour a cup of olive oil into a bowl. Season with 1 tbsp. of paprika, a pinch of black pepper and salt.

Coat the partidges well inside and out with the dressing.

At the bottom of two clay pots, pour 2-3 tbsp. of olive oil.

Cut the carrots and mushrooms. Season them with salt and put them at the bottom of each clay pot.

Place the partridges on top. Pour the remaining dressing and red wine over them.

Add a few peppercorns and a bay leaf. Cover the casseroles and put them in an oven preheated to 390°F (200°C). Roast them for about an hour.

Serve the Partridges with Wine and Mushrooms with mashed potatoes!
