How to make
Peel and dice the potatoes. Try to keep the cubes the same size, so that they all cook through. In a suitable large frying pan, heat a cup of olive oil along with two unpeeled cloves of garlic.
After a few minutes, remove the cloves and add the sliced bacon. Fry, until it aquires a golden color.
Add the potato cubes seasoned with salt and a pinch of rosemary into the pan.
Pour in a cup of vegetable broth or warm water, cover the pot and cook, until the potatoes are fully cooked.
When they are ready, make nests with a spoon and crack an egg into them.
Cover the pot again, cook, until the eggs are poached. When you add the eggs, you can add cubes of yellow cheese, mozzarella or processed cheese.
Serve the dish sprinkled with black pepper and finely chopped parsley.
