How to make
Boil the potatoes in salted water. Leave them to cool completely, peel them and cut them into large pieces.
Put the sliced potatoes in a bowl and mix them with the black pepper, tarragon, parsley, salt and the crushed garlic clove.
Prepare the homemade mayonnaise by beating the egg in a deep, narrow bowl. Add the oil and lemon juice to it. Add a pinch of salt.
Position the blender at the bottom of the bowl and turn it on at maximum speed. When you see it turning white at the bottom, wait a few seconds and very slowly start pulling the appliance up and the mixture will turn white all over.
If there is a gap between the head of the liquidizer and the sides of the container you are using, you must slide it very lightly and sideways to emulsify the mayonnaise evenly throughout.
When you are ready, mix the seasoned potatoes with the homemade mayonnaise and season with more spices and as much salt as you like.
You can also use your imagination and add more products to the potato salad such as ham, pickles, grated boiled egg, capers, chicken or tuna.
Serve the salad well chilled and garnished with black olives and fresh parsley.
