How to make
Heat the sunflower oil in a large pan. Throw in an unpeeled clove of garlic and a sprig of rosemary.
Season the pork loin with salt and black pepper. Roll the pieces of meat in flour and fry them in heated oil, until they aquire a golden color. Remove the meat and place it onto kitchen paper. Cut the onion into crescents. Mash it with a pinch of salt.
Pour a cup of olive oil into another pan.
Add the chopped onion on the bottom, the carrots on top and finish off with the remaining onion. Drizzle with 2-3 tbsp. of white wine and as much warm water.
Sprinkle with a pinch of oregano or savory herb - whatever you prefer. Cover the dish and stew it for about 15 minutes on low to moderate heat.
Serve the meat warm with a salad of your choice!
