How to make
Separate the eggs into whites and yolks.
Beat the egg whites with 3.2 oz (90 g) of sugar, until a fluffy meringue is obtained, then beat the yolks with the remaining 3.2 oz (90 g) of sugar, until a white mixture is obtained.
In a separate container, pour the cream with the vanilla and beat with a mixer, then add the already beaten egg whites and yolks.
To the already prepared mixture, add the crushed nuts, croquant and the finely chopped green figs (from the jam).
Mix everything with a spatula and pour the mixture into a suitable container. Freeze it in the freezer.
Serve the nougat ice cream in a suitable plate and if you like, you can sprinkle it with nuts and the remaining syrup from the jam.
The French Nougat with Fig Jam is ready.
