How to make
In a deep bowl with a mixer, beat the butter and sugar, until a white and fluffy mixture is obtained.
Then add the eggs one at a time and continue beating, by gradually adding the flour, baking powder, coconut milk and vanilla.
Continue to beat, until a homogeneous mixture is obtained. In the muffin tin, place a paper muffin cup in each mold on the tin.
The 2/3 of the cups are filled with the mixture and baked in a preheated oven at 360°F (180°C) for about 15-20 minutes.
Once they are ready, take them out of the oven and leave them to cool. Beat the butter and powdered sugar with a mixer, until a white mixture is obtained.
Add the coconut milk and vanilla and continue beating, until all of the ingredients are completely mixed and a fluffy cream is obtained.
Using a spatula, decorate the cupcakes with the resulting cream and decorate with grated coconut. The cupcakes are served cold.
