About 8 cups of water are poured into a pot and after it boils, the tripe is cut into large pieces, it is added and left to boil for 5 minutes.
Beat the yogurt with the egg yolks and flour, add a little of the broth and mix and add the thickener little by little to the soup.
Just before the soup boils again, remove the pot from the heat, fry the paprika in a little oil and pour it into the soup.
Serve it hot with mixed vinegar and garlic and sprinkle with cayenne pepper.
