Clean quinces from the peels, seeds and if there are any rotten areas. Wash them and cut them into slices.
Put the sugar and about 1 liter of water in a saucepan.
Place the saucepan on the stove and heat the syrup, until it boils.
Add the quince pieces, add the cloves, star anise and the geranium leaves.
Reduce the heat and leave the quinces to simmer for about 30 minutes, but if necessary - extend the cooking time.
The liquid should evaporate, thicken and the quinces should soften.
The poached quinces acquire an amazing amber color and aroma!
