How to make
Heat the olive oil in a deep frying pan over medium heat. Fry the drumsticks, until they aquire a golden color on all sides (for about 15 min.) Meanwhile, clean the red pepper and cut it into large pieces.
Peel and cut the chorizo into slices. Clean and finely chop the onion and garlic. Remove the drumsticks from the pan and lower the heat on the stove.
Pour the chopped onion and red pepper and cook for about 10 minutes, until they soften. Add the chorizo and garlic and fry for about 5 minutes. Stir the tomato puree and cook for about a minute.
Return the chicken drumsticks and add the thyme, white wine and broth. After it boils, cover with a lid and leave the dish to cook for about 25 minutes over low heat.
When ready, add the rice and cook for about 20 more minutes, or until the rice is fully cooked.
If necessary, if the rice is not cooked, but has absorbed all the liquid, you can add broth or water, until it is fully cooked. Finally, sprinkle with the finely chopped parsley.
The chicken drumsticks with chorizo and rice are very tasty.
