How to make
Finely chop the onion and carrots.
Stew them in the oil along with a little salt and water. As soon as the onion softens, add the tomato, which has been peeled and cut into cubes. Cook over a low heat for a few minutes, until the tomato liquid has evaporated, by stirring occasionally. Add the peppers, flour and all the spices and mix. If you like spicy food, add a hot chili or a hot pepper.
Strain the water from the tin of chickpeas and wash them under running water.
Add them to the dish as well. Pour about a liter of hot water and leave them to simmer on the stove for about 30 minutes.
Cut the bacon into thin strips and fry them, until they aquire a golden color. Add the strips to the Chickpea Stew and remove it from the heat.
Before serving the chickpea stew with bacon, sprinkle it with chopped fresh parsley.
