How to make
The diced or strips of bacon are fried in a pan in the oil until golden and set aside on a plate with a slotted spoon.
In the same oil with a pinch of salt, stew the chopped vegetables - onion, leek, garlic, carrot, pepper and celery. Once they soften, add 1 tbsp. flour, stirring vigorously so that the flour does not become lumpy, and after a minute - 1 tbsp. smoked paprika.
Add the peas, peeled and halved small potatoes and hot vegetable or beef broth, enough to cover the vegetables. Add a few black peppercorns and the bay leaf, and let the stew simmer until the peas and potatoes are done.
Once cooked, remove the potatoes and mash them with a fork, return them to the pea stew along with the chopped tomatoes.
The homemade stew is left to simmer for a few more minutes at a moderate temperature, then season with salt and black pepper to taste, stir and sprinkle with green seasoning of choice - dill, parsley, thyme or another to your taste.
The pea and bacon stew is served hot, with each portion sprinkled with fried bacon.
