How to make
Use fresh coconut shavings or make them yourself from coconut - drill a hole in the coconut with a nail and drain the liquid. Hit the shell with a hammer several times and once the coconut splits, remove the white part and grate it.
Add the flour and the strained coconut milk (can be bought) to the already beaten egg - a thick paste should be obtained and if necessary a little water is added. Season with salt and black pepper.
Heat the frying fat. Dip and roll each shrimp in the breading. Fry them, until they're nicely browned.
Serve the coconut shrimp with sauce of your choice - spicy sauce or sweet and sour sauce.
