How to make
Fillet the cleaned fish.
Grind the walnuts and garlic in a blender. To this mixture add pesto, olive oil and as much salt and black pepper as you like.
Spread the fillets well with this paste and arrange them in a tray with baking paper, lightly greased with olive oil.
Bake the fish for about 10-12 minutes, until the crust is slightly browned.
The zucchini, cut into medium cubes, are sauteed in a large preheated pan with a little olive oil.
When the zucchini aquire a brownish color, add a little butter, a few sprigs of fresh thyme and remove the pan from the heat.
Serve the fish garnished with zucchini.
The trout with walnuts, basil and sauteed zucchini is very tasty.
