How to make
Wrap the sweet potatoes in foil and bake them at 230°C, until they soften, for about 1 hour.
Unwrap and peel the sweet potatoes.
Transfer them into a bowl and mash them. Set them aside and cool, while you make the potato dough for this unique sweet bread.
Preheat the oven to 175°C. In a large bowl, beat the eggs and sugar.
Add the butter, water and beat, until everything is well mixed.
In a separate bowl, mix the flour, baking powder, cinnamon, salt and nutmeg.
Add the dry ingredients to the wet ones and stir.
Blend the sweet potatoes and stir, until they are well blended and add the walnuts.
Pour the mixture into an oblong tray.
Bake the potato bread 70-80 minutes (or until a toothpick placed in the center comes out clean).
Cool the sweet potato bread before serving.
