How to make
It is mandatory touse raw nuts, they are optional - almond, walnut and hazelnut, or they can be mixed.
In the saucepan pour the sugar, honey, butter and vanilla and a little water (about 2 tbsp.).
Place it on a moderate heat (from 9th degree to the 5th degree) - the sugar will melt along with the other ingredients and will turn into a porridge. Leave it to boil, by stirring frequently, until a golden brown, caramel is obtained.
It should not be dark in color, but rather pleasant beige. Pour very coarsely chopped nuts and stir for about 1 minute.
Immediately remove from the heat and pour onto baking paper and spread very quickly with a spatula, because they harden immediately.
Leave it to cool completely and then break it into pieces.
With this way of preparing caramel, the nuts do not become too hard, but pleasantly crunchy and most of all easy to prepare.
