Wash and clean the trout, but do not remove the heads.
Salt them inside and out, and on the inside, rub with black pepper. Grease parchment paper and wrap the trout, which you've sprinkled with crushed almonds, in it.
Place it in an oven dish which you've greased with vegetable oil and bake in a moderate oven. Serve the trout hot with a slice of lemon and parsley.
