How to make
Clean the apples and remove their handles. Stick in a wooden stick or skewer where the handles were.
Put the sugar and glucose into a pot without stirring, heat until the mixture is caramelized. Meanwhile, heat the cream in another dish, but do not boil it.
Remove the caramel from the heat and add the hot cream in a trickle to it, while stirring. Return the pot back to the heat and mix in the butter on low heat.
Add a little food coloring, stirring until you get a homogeneous mixture and remove it from the heat. Dip each apple skewer in the caramel mixture immediately. Arrange them on baking paper and leave them to harden for 20-30 minutes.
Optionally, before the caramel fully hardens, roll in crushed nuts.
