You can't miss these fantastic Zucchini Pancakes.
Shred the zucchini, season with salt and set aside for 10 minutes. Squeeze of the excess juices.
Add the eggs, garlic, dill and stir.
Heat a nonstick pan and grease with butter, cook 1/4 of the mix at a time.
Flip the pancakes and cook, until golden brown.
Serve the Zucchini Pancakes with Feta cheese, or shredded Cheddar cheese.
They are delicious!
