How to make
In a bowl, grate the zucchini, pour in the water, salt, spearmint and flour (enough to get a medium consistency - not too runny or too thick).
Stir well, then pour about 1 tbsp of oil in a moderately heated pan and pour in enough mixture for 1 pancake.
Once fried, flip it over and if necessary, pour in some more oil and shake. Do this for the rest of the mixture.
