How to make
For the recipe I used frozen herring. Defrost the fish, arrange it in a suitable box and sprinkle it with plenty of sea salt.
Refrigerate the box for 24 hours. Then wash the fillets under running cold water.
In a pot, pour the vinegar, water, bay leaves and peppercorns. Add 1 tbsp. of sugar. Boil the fish marinade for 10 minutes.
In the middle of each herring fillet put a piece of pickle, onion and 2-3 capers. Roll it up and pierce the end with a toothpick.
Arrange the fish rolls in 4 jars. Pour the cooled marinade over them and add the bay leaf and black peppercorns.
Close the jars with marinated fish and refrigerate them.
The homemade marinated herring with pickles and capers will be ready for consumption in 5-6 days.
