How to make
Cut the meat into portions and boil it with a little salt.
Cut the zucchini, eggplant and pepper into circles. Peel the tomatoes and cut them in half.
Finely chop the onion and garlic and fry them, then fry the rice. Pour a glass of the broth and a glass of water.
Arrange all of the vegetables on the edge of the baking pan, by overlapping them. Place the meat in the middle, sprinkle it with the spices and finely chopped parsley.
Put the rice in the oven to bake, until it is fully cooked and the broth has evaporated.
The oven-roasted rabbit with rice and vegetables is ready.
