How to make
The white beans are soaked overnight. The next day they are boiled, until they are fully cooked and then they are strained. Transfer them into a baking pan.
Add the sliced pickles and season them with salt and savory herb.
Heat the oil, fry the finely chopped onions, grated carrots and roasted peppers (cut into strips).
When they soften, add the paprika, stir and pour a little water and season with as much salt as you like.
Pour them into the baking pan and stir. Sprinkle with dried mint and bake them in a preheated oven at 360°F (180°C) for about 30-40 minutes, until they remain in fat.
Serve this dish on Christmas Eve with a lean pita.
