How to make
Boil the potatoes in slightly salted water for about 30 minutes and leave them to cool, by removing them from the water.
Clean the kale leaves, remove the hard veins and wash them well.
Shred them into pieces and put them in a bowl with a pinch or two of salt, 4 tablespoons of oil and 2-3 tablespoons of vinegar.
Massage the green leaves with your fingers, until they soften.
Peel and cut the potatoes into chunky pieces, finely chop the onion and add them to the kale.
Season with more salt, oil and vinegar, since potatoes absorb a lot and go well with both greasy and sour, but it still depends on everyone's taste.
Add the kalamata olives - large and fleshy, crumble the white cheese and add it to the appetizing potato salad.
Stir and serve the kale and potato salad with your favorite drink.
