  • lamb brain - 4 pcs.
  • fresh garlic - 5.3 oz (150 g) unpeeled
  • butter - 1.8 oz (50 g)
  • oil - 2 - 3 tbsp.
  • bay leaf - 2 pcs.
  • black pepper - 10 grains
  • cloves - 2 stalks
  • salt - by taste

How to make

The lamb brain is rinsed well and left in cold water for 1 hour, but make sure to periodically change the water with a new one.

After this time, strain it and soak it in slightly warm water for 10 minutes, strain again, pour cold again and place it on the stove over high heat with bay leaves, peppercorns, cloves and salt.

When it boils, reduce the heat and leave it for 5 minutes. Cover the dish with a lid and leave it to cool and if you are not in a hurry, you can leave it for a few hours to absorb the aromas of the spices.

Preheat the oven to 390°F (200°C), arrange the lamb brains in a small baking pan and drizzle them with oil or olive oil and as much salt as you like.

Bake, until they aquire a golden brown color.

When they are semi-cooked, the garlic is also prepared.

Clean the outer layers, cut it into pieces and fry it in butter and oil.

The lamb brain is taken out and transferred into serving plates. Spread the garlic with the butter on top.
