How to make
Finely chop the onion, leek, celery, hot pepper and garlic. Fry them in the fat with a pinch of salt and then pour a little water, so that they can stew and soften nicely. If you use freshly picked green tomatoes, add them, but cut into larger pieces.
Add the flour and paprika when the water has evaporated and stir for a minute over low heat. If the vegetables have absorbed the fat, add a little more oil before adding the flour.
Pour water or vegetable broth. Now is the time to add the chopped green tomatoes, if they are pickled or marinated. Boil the frenkova soup for 20 minutes.
Towards the end, add the chopped celery stalks and noodles. Boil for 3-4 minutes and the soup is ready.
Serve this typical village-style soup with more chopped green leaves of celery or parsley.
In case you use fresh tomatoes for tomato soup, add a little vinegar and that way it has a pleasant and delicate sour taste. The pickled tomatoes are not necessary, because they are sour.
