Ingredients

  • peas - 1.1 lb (500 g) frozen
  • leeks - 3.5 oz (100 g)
  • garlic - 2 cloves
  • olive oil - 4 2/3 tbsp (70 ml)
  • lemon - 1/2 citrus, the juice
  • mint - 8 leaves + stalks for decoration
  • cayenne pepper - 1 - 2 dried peppers
  • salt - by taste
  • black pepper - 2 pinches

How to make

The peas are boiled, until they soften. They are strained and left to cool.

Chop the leeks and garlic and stew them in olive oil with a pinch of salt for 5 minutes, while stirring occasionally. When ready, leave them to cool slightly.

In a bowl pour the peas, leeks with garlic, black pepper, fresh mint leaves, salt, lemon juice and crushed hot peppers.

Everything is mashed, but not into a puree. The rough texture of the delicious spread should slightly be noticeable.

For creaminess, you can add a spoonful or two of liquid cream or for a vegan version - vegetable cream or a little of the water in which you boiled the peas.

The spread is tried and flavored with more lemon juice, salt and black pepper, if you like.

Serve the peas and mint spread chilled with toasted slices of bread or as a garnish for fish and shrimp.
