How to make
Beat the eggs with the sugar using a mixer, until they double in volume.
Add the oil and yogurt and beat again.
Sift the flour with the baking powder and add it gradually, while stirring by hand. Add the vanilla, finely ground walnuts and bananas, which we have previously been mashed with a fork.
Cover a rectangular sponge cake tin with kitchen paper and pour the sponge cake mixture inside. Bake for about 35-40 minutes in a preheated oven at 360°F (180°C) without a fan.
Take out the sponge cake once it cools completely.
Serve it with vanilla ice cream, fresh mint leaves and sprinkled with powdered sugar.
The banana sponge cake with brown sugar and walnuts is ready.
