How to make
Crack the eggs into the jug of the blender carefully, so that parts of the eggshells do not fall into it. If they do anyway, they are carefully removed.
The ripe bananas are peeled and broken into several pieces, then placed in the jug of the blender. The bananas should be well ripened, with small brown spots, to make the pancakes sweeter and more fragrant.
Add the two tablespoons of oats and 1 tbsp. of coconut shavings. Towards the end, add the baking soda.
All of the products are blended together, in order to obtain a smooth and homogeneous mixture.
Heat the pan, then grease it with a little coconut oil.
Pour a little of the banana pancake mixture and form small round fitness pancakes (larger pancakes are hard to turn over and often tear).
After baking them on one side, the gluten-free pancakes are carefully turned over with a spatula on the other, so that they don't tear.
They can be garnished with liquid honey, coconut shavings, fruit of your choice (fresh strawberries, raspberries, kiwis, bananas, mangoes ...)
