How to make
Simple but very healthy and low calorie chicken soup, which is suitable for breakfast, lunch or light dinner.
Wash the chicken breasts and boil them in plenty of water along with the onions (chopped in 4), garlic cloves, half of the parsley, peeled and halved white radish, kale and ordinary cabbage leaves, a little olive oil, salt, two celery stalks and one carrot.
If your chicken breasts are boneless, you can add a chicken spine to the broth to enrich the taste.
After 30 minutes, remove the meat and strain the broth.
Place it back into the pot, by adding water, if it has evaporated.
Wait for it to boil and add the other two carrots, a stalk of celery and a potato - all diced.
Season with more salt (but do not overdo it, as salt should be avoided in large quantities in any diet), black pepper, chopped parsley and dried coriander leaves.
If desired, you can add a pinch of ground savory herb.
Boil, until the vegetables are ready and well softened and then add the boiled and shredded chicken breast (use chicken breasts, as they have the least fat) to the delicious chicken soup.
Add a few tablespoons of olive oil and remove it from the heat.
Serve the dietary soup hot with lemon slices and wholemeal slices of toast.
