Ingredients

  • einkorn flour - 5.3 oz (150 g) wholemeal
  • wheat flour - 4.2 oz (120 g) wholemeal
  • coconut milk - 3.7 fl oz (110 ml)
  • baking powder - 1 tsp.
  • brown sugar - 3.5 oz (100 g)
  • egg whites - 1 pc.
  • salt - 1 pinch
  • lemon juice - from 1/4 lemon
  • chia - 1.8 oz (50 g)

How to make

Mix the two types of flour in a bowl, as well as the chia and the baking powder. Separately, lightly beat the egg whites with a pinch of salt and add the coconut milk, lemon juice and sugar and beat, until it has melted.

Pour the liquid mixture in the dry mixture and knead the dough, by sprinkling extra wholemeal flour, until the dough is smooth and compact. It will stick a little, but it is inevitable.

On a floured surface, roll it out into a thin crust and cut out the cookies.

Arrange them at a short distance from each other in a tray covered with baking paper. You will get 2 trays from the standard ones in each oven.

Turn on the oven to 370°F (185 degrees) for about 16 minutes or until they aquire an appetizing color.

The cookies become very tasty, crunchy and most importantly - healthy!

It is best to store them in an airtight container, so that they do not harden too much.
