Ingredients

  • flour - 8.1 oz (230 g)
  • vegetable milk - 4/5 cup (200 ml) soy, almond, etc.
  • olive oil - 3 1/3 tbsp (50 ml)
  • baking powder - 2 tsp (10 g)
  • lemon juice - 2 tsp (10 ml) freshly squeezed
  • red peppers - 1 pc.
  • tomato paste - 1 tsp.
  • spring onions - 2 stalks, leaves (or a bunch of chives)
  • coriander - 1 tsp. (dried leaves)
  • oregano - 1 tsp.
  • salt - 1 tsp.
  • pumpkin seeds - 2 tbsp. (raw, peeled)
  • sunflower seeds - 2 tbsp. (raw, peeled)
  • poppy seeds - 1 - 2 tbsp.
  • margarine - to grease the molds

How to make

Finely chop the red pepper into small cubes and make sure to choose one, that is rich in color, fleshy and sweet.

Finely chop the spring onions.

In a bowl, mix the vegetable milk with the olive oil, lemon juice and salt.

Sift the flour with the baking powder into them and mix, until a homogeneous mixture is obtained. If the consistency is thick, add a little water or more vegetable milk.

Divide the mixture into two equal parts. In one mix the peppers and tomato paste and in the other the spring onions and spices.

Spread margarine on the silicone muffin molds. Paper muffin cups can also be used, but they are slightly larger and the baking time will increase slightly.

Pour a spoonful of the green mixture into each mold and top it up with the red one without filling it to the brim.

Sprinkle with sunflower, pumpkin and poppy seeds.

Bake the delicious savory muffins for 30 minutes at 330°F (165°C) in a preheated oven.
