Ingredients

  • apples - 2 pcs. (medium - sized)
  • pears - 2 pcs. (medium - sized)
  • ground walnuts - 1/2 cup
  • raisins - 1 handful
  • cinnamon - 1 tsp.
  • butter - 2.1 oz (60 g)
  • FOR THE CARAMEL
  • sugar - 5 tbsp.
  • FOR THE MIXTURE
  • eggs - 4 pcs.
  • crystal sugar - 1 cup
  • flour - 1 and 1/2 cups
  • baking powder - 2 tsp (10 g)
  • vanilla - 2/5 tsp (2 g)
  • lemon peel - from 1 lemon

How to make

Cut 1 apple and 1 pear into small cubes and cleaned them from the seeds and place them in a bowl.

Add raisins, walnuts and cinnamon to them. Mix well and set them aside.

Cut the other apple and the other pear into slices.

In a deep bowl, beat the eggs with the sugar. Add the flour, baking powder, vanilla and the grated peel of 1 lemon.

In a cake tin or other suitable baking dish (preferably deeper) put 5 tbsp. of crystal sugar. Place the cake tin in a heated oven and wait for the sugar to caramelize.

Then very quickly melt the butter in the caramelized sugar and pour the diced fruit.

On the sides of the cake tin, arrange the slices of apples and pears facing each other.

Pour the cake mixture over them and bake them for 40 minutes at 360°F (180°C).

Once the caramel walnut pie with apples and pears has cooled, turn it over onto a tray or other suitable dish and decorate it as you like.

I used coconut shavings, caramelized coconut and chocolate sprinkles to decorate the pie.
