How to make
For this fruit cream, grate one orange after you wash it very well. Peel it with a knife and take out a few pieces without the skin.
Place the pieces on the bottom of the cups in which you will serve the cream.
Squeeze 1 1/5 cups (300 ml) of orange juice.
In a bowl put the orange peel, sugar, 4/5 cup (200 ml) of juice and the cornstarch. Stir with a wire whisk.
Put water, 2/5 cup (100 ml) of juice and cinnamon in a saucepan.
Boil the mixture and remove the cinnamon. Pull it away from the heat.
Pour the mixture over the yolks in a thin stream, while stirring the pudding without stopping.
Place it back onto the hob and boil the citrus cream to the desired density.
