Ingredients

  • flour - 5.6 oz (160 g)
  • einkorn floor - 3.5 oz (100 g)
  • warm water - 2/3 cup (150 ml)
  • dry yeast - 1 1/3 tsp (7 g)
  • olive oil - 2 - 3 tbsp. (oil)
  • salt - 2 tsp.
  • sugar - 1 tsp.
  • chopped olives - 3.5 oz (100 g)
  • seeds - 1 cup (sesame seeds, poppy, sunflower, flaxseed or of choice)

How to make

In a suitable bowl, sift the flours and add the dry spices, salt and seeds. Pour the yeast and sugar into lukewarm water to activate it. Mix all of the products and add olive oil.

Knead the dough and leave it to rise for about an hour, in a warm place. After doubling its size, mix it again, shape it into the desired shape and place in a tray covered with baking paper.

Cover it with foil and leave it to rise again. Bake it in a preheated oven at 180 degrees for about 20 minutes.

Take it out from the oven and cover with a clean towel. Leave the bread to rest for about 15-20 minutes before cutting it.

Note: In this recipe I also use einkorn flour, mostly because it is healthy, but also because it add a more interesting flavor to the bread. You can experiment with different types of flours and seeds to your liking.
