How to make
Dissolve the yeast and sugar in water heated to 100°F (37 degrees). Leave it to activate for 5-10 minutes.
In a blender, grind the walnuts in seconds with 0.7 oz (20 g) of oatmeal (you can also use muesli)
Sift both types of flour into a bowl, mix them with the salt and ground nuts and make a well in the middle. Pour the activated yeast and olive oil into it and knead an elastic dough. Only add as much flour as you need so that it doesn't stick to your hands at the beginning.
Let the dough rest for 15-20 minutes and break it up into about 19 equal parts, about 2 oz (60 g) each. Form a ball, then stretch it out into a slightly elongated bread bun.
Prepare two bowls - one with a little water and the other with the remaining 5.3 oz (150 g) of fine oatmeal or muesli. Smear each bread bun with water on all sides using a silicone brush. Then roll it in the nuts in the bowl and arrange them at a distance in a tray covered with baking paper.
Leave the bread buns to rise for about 40 minutes and then bake them in a preheated 390°F (200 degree) oven until they aquire a golden brown color - about 25-30 minutes.
Once you take them out from the oven, cover them with a damp cloth for 10 minutes.
Very tasty wholemeal bread buns with walnuts and oatmeal with a crispy hard crust and a soft core!
