How to make
Sift the flour into a pan and make a well in it. Dissolve the yeast in a little water and sugar in a metal bowl that you boil on the stove. Once everything is homogenized and warm, add the yeast in the well of flour.
Add salt and a little water, knead a very smooth and soft dough. Cover with transparent plastic wrap and leave it to rise in a warm place.
Tear balls out of the risen dough, stretch them with your hands and put them to fry in preheated oil on both sides.
Serve the mekitsi with garnish as desired - jam, powdered sugar, honey, feta cheese etc.
