Ingredients

  • broccoli - 5.6 oz (160 g)
  • apples - 1/2 pc.
  • carrots - 1 pc.
  • parsnip - 1 root
  • cabbage - 4.2 oz (120 g)
  • onion - 1/2 medium - sized onion (sweet)
  • olive oil - 2 tbsp (30 ml)
  • apple cider vinegar - 1 1/3 tbsp (20 ml) or by taste
  • salt - by taste
  • black pepper - 1 pinch (freshly ground)

How to make

Clean and peel the vegetables and the fruit.

Grate the parsnips and finely chop all of the other vegetables and the apple.

Season with salt, olive oil, black pepper and vinegar and mix everything well.

This vitamin salad is prepared extremely quickly and easily in a blender or chopper, as all products plus the dressing are put in the appliance and are grinded for seconds at medium speed, so that they aren't blended, but in small pieces.

The vitamin salad with broccoli is an extremely fresh salad and is served straight away.

It can be used as a companion to various fish and meats, as well as consumed on its own as a light and healthy dinner or lunch.
