How to make
Wash the peppers and cut them into circles. Wash the zucchini and cut them into cubes.
Put the butter in a pan, add the peppers and stew them.
After a few minutes, add the zucchini cubes.
Leave them to simmer for a few minutes, then add a little black pepper, salt and soy sauce.
Remove them from the heat and add the water from the couscous.
Put the couscous in a bowl, add the butter and pour hot water over it.
Cut the tofu into slices and fry it on both sides.
Serve a bit of the couscous, stewed peppers, zucchini, fried tofu and arugula on a plate.
