Ingredients

  • quinces - 4 quinces (about 1 kg)
  • sugar - 2.2 lb (1 kg)
  • citric acid - 1 tsp.
  • water - 1 1/2 cups
  • geranium - optional
  • cinnamon sticks - optional

How to make

Put the sugar and water in a suitable tray for jam. Place it in a preheated oven to dissolve the sugar until a sugar syrup is obtained.

During this time, wash the quinces with a brush carefully. Remove the seeds of the fruit and grate them on a coarse grater. Immediately put them in boiling sugar syrup, so that they do not darken. Stir and let the jam bake in the oven for about an hour at a moderate temperature. Be careful with the temperature, so that it does not boil. Stir from time to time.

Check to see if it's ready with a porcelain plate and a spoon - scoop it with a spoon and make 2-3 drops on the bottom of a dry porcelain plate. If the drops are not runny and remain whole, the jam is ready.

Sprinkle it with citric acid, stir and leave it in the oven for another 5 minutes.

If desired, you can flavor it with geranium leaves or cinnamon sticks.

The finished jam is poured into suitable dry and warmed jars.

Just to be safe, I sterilize them for 5 minutes.

I have been preparing the jam this way for years and I use it for pancakes, mekitsi, cakes and creams. This jam turns out well, even without much effort!
