In order to persuade our children to eat more vegetable soups and purees, it is important how we serve them, to grab their attention.
This cauliflower soup is healthy and tasty for people of all ages, but for children it would be interesting, if we garnish it with their favorite cheese crackers.
In this case, I chose crunchy cheese balls, which are sprinkled just before serving, so that they are crunchy.
The cauliflower soup itself is easy to prepare, as you usually would, but avoid black pepper for children and heavier spices.
Stew the leeks in butter, a pinch of salt and a little water.
When they soften, add the cauliflower, chopped into small pieces.
Pour the milk and water (or homemade vegetable broth) and boil the soup for 20 minutes under a lid.
The finished soup is strained and seasoned with a little salt. If desired, it can be diluted or thickened with cream.
Serve the cauliflower soup for kids, sprinkled with crunchy cheese balls.
