How to make
Prepare the products before you start with the cake batter.
The eggs should be at room temperature, flour - sifted with baking powder and vanilla and the apples - cleaned and half of them cut into small cubes and the other half into thin crescents. Sprinkle the fruit with a portion of freshly squeezed lime juice, so that they do not darken.
Turn on the oven and preheat it to 360°F (180 degrees).
Beat the eggs with the sugar into a fluffy and thick cream. Add the oil, dark and fragrant rum and 50 ml of lukewarm water. Beat again until a smooth mixture is obtained.
Pour the sifted flour with the baking powder and vanilla and mix with a wooden spoon or silicone spatula.
Finally, add the finely chopped apples (1 and a half), mix lightly and pour the cake batter into a form greased with margarine (mine is 24 cm in diameter). You can cover the bottom and walls of the form with baking paper and then grease it.
Arrange the thin slices of apple on the surface, sprinkle with granulated sugar and put it in the preheated oven.
Bake the cake for about 35 minutes or until it aquires a golden color and the apples on the surface aquire an appetizing color.
Take out the warm apple pie cake, spread it with the jam and leave it to cool on a wire rack.
Sprinkle it with grated aromatic lime peels and serve it.
