How to make
Put the almonds and 4 tbsp. of sugar in a chopper and grind them into a powder. Add the almond flour and mix everuthing well.
In a bowl with a mixer, beat the egg whites and the remaining sugar into a foamy mixture. Add the almond mixture to it in portions, by stirring gently with a spatula until the mixture is well absorbed.
Cover three baking trays with a size of 9.1″ (23 cm) with baking paper and grease them with oil.
Distribute the mixture in them and bake at 360°F (180 degrees) in a preheated oven for 20 minutes.
After removing the cake layers, leave them for 3 minutes and turn them over onto a wire rack, remove the paper and leave them to cool completely.
Meanwhile, prepare the cream for our gluten-free cake.
Put the mascarpone, sour cream and powdered sugar in a bowl and beat well with a mixer. In another bowl, beat the confectionery cream.
Finally, mix the two mixtures well.
Assemble an almond cake, by arranging a cake layer first and then adding cream and so on until you run out of products. Finish off with cream and garnish it with strawberries.
