After the catch, I froze the octopus for 1 week in the freezer.
In a pot with a lid pour water, add two bay leaves and 5-6 grains of black pepper.
When the water boils strongly, grab the octopus by the head and immerse it for 10 seconds.
Take it out, wait for the water to boil again and repeat the procedure, the third time I left it to boil. This curls its tentacles and preserves its skin during cooking.
Boil until it's ready. It usually takes between 30 and 50 minutes, there is no exact time, because it depends on the size and age, which we can't know for sure.
Personally, after the 30th minute, I check it every 5 minutes with a toothpick in the thickest part, where the tentacles meet.
When the stick enters it easily, it is ready.
This is the main thing - after the octopus is well cooked, you can prepare it as you like - Pulpo a la Gallega, grilled, fried, etc.
This one is fried in olive oil and 30 seconds before I pull it away from the heat, I add the garlic. Then sprinkle it with a little hot paprika, parsley and a little salt.
The spicy fried octopus with garlic and parsley is ready!
