How to make
Boil 2 1/2 cups (600 ml) of water. Add 2 tbsp. of olive oil. When the water boils again, add the wheat semolina inside and stir at all times, so that no lumps form. Season with salt.
When the mixture thickens enough, remove it from the heat and leave it to cool for a few minutes. Add egg yolk and mix everything well.
Finely chop the dill, olives and onions. Add them to the mixture. Squeeze the juice of half a lemon and stir. Start adding olive oil in a thin stream, while stirring constantly, until the mixture is smooth and creamy.
Leave it to cool and serve it, garnished with olives.
