  • bread - 24.5 oz (700 g), old or rusks
  • caviar - 4/5 cup (200 g) (tarama)
  • oil - 4/5 cup (200 g)
  • onions - 1 head
  • citric acid - 1 tsp
  • breadcrumbs - if needed

How to make

Soak the bread (rusks) until softened and squeeze well by hand. Add the caviar, oil, citric acid and coarsely grated onions.

Beat the mixture with a fork or spoon until homogeneous. If needed, add breadcrumbs to thicken it and citric acid to taste.

Serve the caviar cooled. For best taste, serve the next day.
