How to make
Heat the oil in a large pot and fry the chopped onion, then the sliced carrots and parsnips successively. Top up with the hot broth or water and allow it to boil. Clean and add the diced potatoes and chopped cabbage.
Once soft, dissolve the tomato paste with a little of the broth from the soup and add it to the soup. Season with salt, pepper and oregano.
Once you remove from the heat, add the chopped fresh parsley.
