How to make
Put the boiled chickpeas, white cheese, fresh garlic (chopped), mint leaves and parsley in the blender bowl. Blend them.
Soak a slice of bread in milk, strain it, by squeezing the liquid and add it to everything else, along with the yolks, olive oil and lemon juice.
Knead well as you can adjust the density by adding a little milk if it is too thick, or more bread if it is too thin.
Shape your vegetable patties, roll them in flour and arrange them in a tray covered with baking paper. Sprinkle them with olive oil and bake them at 390°F (200 degrees).
The appetizing chickpea patties are ready once they aquire a light golden tan.
They shouldn't be baked for too long, so that they do not dry out.
You can try frying the meatless patties or breading them in an egg and breadcrumbs.
Serve the chickpea and white cheese patties with a fresh salad and your favorite sauce.
