How to make
Boil the rice in a large amount of salted water. Strain it when it's ready.
Rub the chicken breasts with olive oil and season them with salt and black pepper. Bake them on a grill pan.
When ready, cut them into very small pieces. Cut the pepper into small cubes, the parsley, spring onion and garlic into small pieces and grate the yellow cheese.
In a bowl, mix the chopped chicken fillet, peppers, spring onion, parsley, chilled rice, garlic, tomato puree, tarragon, egg and cheese.
Season with salt and black pepper. Mix the mixture very well.
Form party meatballs and arrange them in a tray lined with baking paper.
Bake them for 20 minutes in a preheated oven at 360°F (180 degrees).
The mini chicken and rice meatballs are ready.
