How to make
Put the tomatoes briefly in boiling water, then peel them and cut them into large pieces.
Clean and chop the onion and garlic. Fry them in the olive oil with a little salt. When almost done, add the tomatoes, more salt, sugar and black pepper. Stir for 8-10 minutes and blend the mixture.
Boil the tomato sauce for another 20 minutes on low heat under a lid.
Peel and clean the roasted peppers from their seeds. They should not be too big or too small.
Beat the two eggs and crumble the white cheese on them. Crush the garlic clove, add it to the stuffing and stir.
With a small spoon, fill the peppers with the prepared stuffing, roll each one in flour, then in the third beaten egg and fry in the oil heated over a moderate heat, until a golden color is aquired.
If desired, you can make a thicker breading with a crispy finish. For this purpose, after the egg, roll the burek peppers in breadcrumbs.
Serve them warm on tomato sauce and sprinkled with fresh and chopped parsley.
